Eclairs get a sweet makeover

Meet French pastry chef Christophe Adam, the man who made an éclair that looks almost too good to eat and well worth the five euros it takes to taste one.
Parisians and tourists alike are flocking to his shop L’éclair de Génie in the Marais, where a rainbow of flavors and designs is waiting to tempt the tastebuds. He’s even planning an all black éclair to honor the great Coco Chanel and her little black dress.
As he told Slate’s Kristin Hohenadel:
“I always loved working on the look and the design of a pastry,” Adam told me. “An éclair has to taste good of course, but it’s also very, very important for it to look beautiful, to have that high-end, contemporary, modern quality. Five euros isn’t cheap for an éclair, but they’re made fresh, with sought-after quality ingredients, in an environment where we pay a lot of attention to aesthetics, and all of that has a cost.”
A cost we would gladly pay if it didn’t include the airfare to Paris. Luckily, he’s hoping to soon open a shop in NYC as well, so move over cupcakes, you’re Continental cousin might just push you off the shelf.
